Numerous national dishes are prepared from seafood: shellfish, squid, octopus, crab, shrimp, seaweed, including marine cabbage. Big legumes (tofu and miso) have also become widespread in Japan. Tofu is a bean cheese made from soy protein and resembling cottage cheese. The Japanese prefer to use it for breakfast.
