There can be nothing tastier on a hot summer day than a refreshing cold okroshka. This soup is loved by all members of our large family, and especially by me and my father.
When I return from a walk on vacation, I am ready to eat two servings of my favorite dish for lunch at once. And mom never ceases to wonder why all the soup disappears from the pan so quickly. Indeed, okroshka in our house never stays longer than a day, because its taste is simply incomparable.
I think this is primarily a great merit of my mother, since it is she who prepares okroshka for all of us. My dad and sister and I help only to cut vegetables, eggs, meat or sausage. Most often, mom, conjuring over a pot of soup, tries to follow the traditional recipe. Therefore, she uses kvass as a broth for okroshka. It is he who gives the dish a sweet and tart taste.
