Borscht Recipe:

Ingredients:

- 1.5 pounds (680g) beef stew meat, cubed

- 1 onion, diced

- 3 cloves of garlic, minced

- 3 medium beets, peeled and grated

- 3 carrots, peeled and grated

- 3 medium potatoes, peeled and diced

- 1 small cabbage, shredded

- 1 can (14 oz/400g) diced tomatoes

- 4 cups (946ml) beef broth

- 2 tablespoons tomato paste

- 2 tablespoons olive oil

- 2 bay leaves

- 1 teaspoon dried dill

- Salt and pepper to taste

- Sour cream and fresh dill for garnish

Instructions:

1. In a large pot, heat olive oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

2. In the same pot, add diced onions and minced garlic. Sauté until onions are translucent.

3. Add grated beets and carrots to the pot. Cook for 5 minutes, stirring occasionally.

4. Add diced potatoes, shredded cabbage, diced tomatoes with their juice, beef broth, tomato paste, bay leaves, dried dill, salt, and pepper to the pot. Stir well to combine.

5. Bring the mixture to a boil, then reduce heat to low and let it simmer for about 1 hour, or until the vegetables are tender.

6. Add the cooked beef stew meat back to the pot and simmer for an additional 10-15 minutes.

7. Remove the bay leaves and taste the soup. Adjust seasoning if needed.

8. Serve hot with a dollop of sour cream and a sprinkle of fresh dill on top.
